Multi-starred chef Yannick Alléno has chosen the charming Hôtel Hermitage Monte-Carlo as the location for his second Pavyllon restaurant, a contemporary dining experience opening in mid-April.

Twice the recipient of three Michelin stars, Yannick Allléno is one of the greatest chefs in the world, making him part of a very exclusive group. Born in the Paris region, this passionate food lover has made a name for himself with his modern, distinctive cuisine that places sauce – a true pillar of French cooking – at the heart of his creativity. He is head of the Yannick Alléno group, present on three continents, and creator of the Pavyllon brand (the “y” is a reference to his name). The first Pavyllon opened in 2019 in Paris, at Pavillon Ledoyen. Stylish yet relaxed, the restaurant has a huge counter where diners can watch their dishes being prepared. The cuisine is based on excellent ingredients and outstanding French gastronomy with a modern twist, informed by the limitless creativity of the chef. The new Pavyllon restaurant in Monaco is special because of its Mediterranean-influenced cuisine bursting with local flavours and featuring the region’s finest products, such as red mullet and sea bass. The dining room boasts floor-to-ceiling windows overlooking the green terrace with breathtaking views of the Rock and port of Monaco. Diners can choose to sit at the thirty-six seat counter facing the open kitchen, or one of the more private tables. The sophisticated decor, by talented designer Chahan Minassian, was designed as an ode to the Mediterranean, blending wood, mosaics, mirrors and fabrics in shades of blue that pay tribute to the sea. With its elegant, laid-back atmosphere, Pavyllon promises to become a favourite new hotspot for Monegasques, with lots of surprises in store for lovers of fine food. The restaurant will be open daily for lunch and dinner.
