Created by Nicolas Baygourry, pastry chef of the Hôtel Hermitage Monte-Carlo, the winner of the annual “Festive desserts” competition held by Monte-Carlo Société des Bains de Mer pays tribute to the theme of this year’s festive season, “Winter Fantasy”. The original creation is a Yule log consisting of raw almond and citrus fruit biscuit with a soft mandarin centre, enhanced with an almond and black lime praline, a praline mousse, a whipped lemon cream with meringue pieces and candied mandarins. Eat in or take away.
