As part of “The Sea is Green” programme, the resort’s establishments are celebrating the sea until 10 May, with themed menus and cocktails, marine-based treatments and more. Gastronomy A wave of marine delights
With the arrival of warmer weather, the Principality’s bars and restaurants take you on a delicious odyssey. Start the evening by soaking up the good life in true Monaco style at the Hôtel de Paris Monte-Carlo, with a signature Calypso cocktail in the iconic Bar Américain. The gin-based, ocean-hued concoction will enchant you as much as the bar’s jazzy 1920s atmosphere. Meanwhile, the elegant, convivial Crystal Bar at the Hôtel Hermitage de Monte-Carlo is serving the Crystal Ocean, an original cocktail available until 10 May.
A prelude to the voyage of the senses you’ll be taken on at Em Sherif Monte-Carlo, which is reopening its doors on 4 April. The restaurant serves classic Lebanese cuisine alongside exclusive creations by executive chef Yasmina Hayek, such as the spring menu inspired by ingredients from the sea. Following its huge success in 2022, Elsa restaurant at the Monte-Carlo Beach, led by chef Mélanie Serre, is also reopening on 7 April: a new season to savour on the magnificent terrace with uninterrupted views of the Mediterranean. During the week dedicated to the sea, from 24 to 30 April, the restaurant is featuring a special menu highlighting nature and sustainable fishing. Finally, at L’Orange Verte restaurant of the Monte-Carlo Bay Hotel & Resort, discover the suggestion of the day based on a seafood product and ocean-inspired collection of “macarons”.

• Underwater tour of the reef – Come and don a wetsuit. Then, with mask and snorkel, explore the underwater ecosystem of the reef that helps to protect the biodiversity of the local waters. A new habitat that is home to endemic species of flora and fauna. Wednesday 10 May.
• Inauguration of the Green Hub – On 12 may, discover the new water-sports base at the Monte-Carlo Beach, which proposes watersports that respect marine flora and fauna.

“La Valse des Méduses” in the Atrium of the Casino de Monte-Carlo
A group of elegant jellyfish floats five metres above the floor in the vast space of the Atrium. This intriguing art installation, created by artist Céline Pagès and Madame Ernest agency, is a reference to the ongoing commitment by Monte-Carlo Société des Bains de mer to protecting the seabed, along with its other green initiatives, which it has been implementing for more than 12 years. Made from recycled materials and powered by small motors, the light, translucent jellyfish appear to “swim” with their domes and long tentacles, allowing them to accompany casino guests across the atrium. Their way is paved on the floor by four openwork gorgons in the shape of a spade, club, diamond and heart, creating an immersive space in which to stroll. All in shades of green, the colour of renewal in nature and of luck!

Expositions
• Themed art walk – The experienced diver Ti’Ou (Virginie Micheleau) explores the seabed around the world. As an artist, she paints on wood, sculpts clay and metal. Until 10 May at the Monte-Carlo Bay Hotel & Resort, come and discover her sculptures which raise awareness of the issues surrounding marine biodiversity. A cause that Ti’ou also defends within her association dedicated to environmental education for children.
• The depths of Larvotto in photos
The diver and photographer Olivier Jude presents rare shots of the underwater world, immortalised in the Larvotto nature reserve. From 7 April to 10 May at the Monte-Carlo Beach.
